If you do try this, make sure you have a very thorough and tested backup (and perhaps even remove the backup disk from the host while working on this conversion). there is a possibility that the resulting configuration might not be supported by your 2012 Mac mini, leaving you unable to use Boot Camp to boot the host into that OS anymore, and there is a small chance it might even damage the existing GPT partitioning, rendering your macOS installation unusable. I would advise against attempting to convert your Win10 installation to use EFI firmware. Maybe I have out-of-date knowledge of the capabilities of the Windows bootloader. usually it is MBR partitioning for Legacy BIOS boot and GPT partitioning for EFI boot, and only rarely do other combinations work correctly. So your BOOTCAMP partition on the host's /dev/disk1s3 is showing up in the VM's EFI Shell as blk2, which is fine, and the guest disk's GPT partitioning and partition layout matches the host disk (as expected), but it is quite unusual for Legacy BIOS boot to work with GPT disks at all.
